What a wonderful 30 days!!
Yes, that first week was torture but once you get past that "hangover week" it gets much much better! In fact I felt amazing! So much energy, face cleared up, and my digestive system has never worked better!
Its hard to believe this was me just 4 months ago! The whole30 really helped with this last couple pounds to get back to my pre preggo size. Granted, my composition has changed, so I still have lots of toning and muscle building to do to really get to where I was at.
What did my daily food log look like? VERY SIMPLE!
Breakfast: Usually eggs scrambled with leftover veggies and meat from the night before and avocado.. I love avocado!!!
Lunch: Salad with veggies and meat
Dinner: Grilled meat, veggies, and sweet potatoes
PWO: I had shakeology with a banana (sometimes almond butter) and water
(Yes, I know that Shakeology is not 100% compliant, but the benefits outweigh any reasoning to cut it out. I have seen it help with so many medical conditions ... it is part of my lifestyle! Plus, the vegan is dairy free, gluten free, no preservative, artificial fillers or sweeteners, sweetened with juice and stevia, contains over 70 super foods, and nothing in the drink is synthetically made.. all from whole food sources)

Mine might look a little different. Here in Hawaii there are lots of Japanese sweet potatoes so that is what I use. They are white inside instead of traditional orange. They are really good! So how do I make this delicious recipe? Too easy! Cook the potatoes like you would for regular mashed potatoes and then while mashing them, add some full fat coconut milk and mix it in! TA DA!! This is my daughters FAVORITE side dish and the first thing she eats. Know what else is good? Take any leftovers the next morning and make a patty out of it. Pan fry it and top it with an over easy egg... or as I call it a "dippy" egg! :) Delish!!
My Asian Marinade
Yeah.. this isn't rocket science! lol
Like I said.. I throw things together. This marinade works well with pretty much any type of meat. During the diet I used it on chicken, steak, and ahi tuna. They all turned out yummy!
In a ziploc bag combine;
2 cloves of garlic minced
3 TB of coconut aminos
2 Tsp. sesame oil
1 TB minced ginger
Toss the meat in and let marinate for at least an hour. Longer is better! Too easy right? The amounts of the ingredients can really be played around with too!
Probably one of the hardest things for me to follow on the diet is... no wine! Wahhh!! :)
I am a water drinker so that wasn't too bad. I also added some green tea and dandelion tea to my diet to give a little change of pace. A cup of dandelion tea at night was very relaxing plus its a great liver detox.
I also ordered myself some bulletproof coffee! I love it! A very smooth coffee that doesn't upset my stomach at all!
A great tool I think everyone should have is a vegetable spiralizer. I have a little hand held one I bought off of amazon that works great with making some zucchini noodles. This helped to make some great spaghetti! Yum!!
There are a couple other recipes that I plan on implementing this time around that should help me out even more! They are all found in the cookbooks Practical Paleo and Well Fed! Really recommend checking those out!!
So yes.. round 1 was down now on to round 2!!
Know whats even better? I get to share the ups and downs with a bunch of amazing women in my challenge group. I seriously don't know how I succeed in anything before I came upon challenge groups. It helps SO MUCH having people who are doing exactly what you're doing and being able to share our good and bad days together!!!
Best believe I had that glass of wine after that last round of Whole30.. just happened to be my hubby's birthday too! :)
